We are a distillery that is doing things differently and everything we do is centred around flavour creation and quality. Our production methods have all been developed in-house through trial and error with extensive research and education as the foundation.

New make spirt that we produce:

• Un-peated New Make using brewing yeast and heritage/landrace barley varieties
• Somerset Peated New Make
• Apple Wood Smoke New Make
• Single Pot Still 55% barley/40% malt/5% Oats/rye/wheat

Cask types available:

• Bourbon, Moscatel, Marsala, Fino, Maderia, Port, PX Sherry, Oloroso Sherry
• Size availability 60L Octaves up to 500L Butts
• Old Solera casks availabe 50-80 years old

High quality casks are sourced from:

• Toneleria J.L. Rodriguez
• J Dias CA & SA
• Kentucky Bourbon Barrel

Private Cask cost varies dependent on cask type/size, mash bill, yeast selection. Approximate costs excluding duty bottling and vat :

One example of casks we will be laying down in the next 12 months being Somerset Peated New Make fermented with Saturated yeast (the old Boddingtons strain) filled into a 50 year old Oloroso Sherry cask supplied by Toneleria J.L. Rodriguez!
