New Make Spirit - Single Malt: Barley

Mashed fermented and distilled in Frome, Somerset, using local barley which has been floor malted by Warminster Maltings.

The vast majority of our new make is now sat in casks destined to be whisky, but we are so happy with this new make that we decided to release it as an unaged spirit. What gives the new make such a lovely creamy-ness is our direct fired copper pot still. We won’t go into what we think our new make tastes like, please just read the comments below from leading people in the industry.

We have been sending out our new make spirit to our Founders’ Club members as well as a few respected people in the industry, here is what people have been saying.

“Nose: Sweet summer grasses, with a fresh maltiness. Hints of petrichor and celery salt. Palate: It's sweet and really quite creamy on the palate. Bright and fresh, with hints of eucalyptus and orange zest. Finishing with a little spicy pepper, and lingering grassy sweetness and there's a satsuma/tangerine juice note that lingers in the empty glass afterwards. “Nose - grappa, apricot compote or jam, slightly medicinal with a sezchuan pepper spiciness. Palate - creamy warmth, apricot stones and pepper on the tip of the tongue. Finish - creamy with lingering pepper spiciness. This is a very refined new make, it’s very drinkable as it is, so I’m extremely excited to see what becomes if it after 3+ years in casks. There are clearly some great elements coming together here - ingredients, equipment, skill and impeccable timing to produce a drink you could bottle and sell on the continent as a finished spirit. I don’t know who they’re getting retribution on, but this distillery is only going to make friends producing stuff of this quality so quickly out the trap. So far our new make has gone down very well with all who have tried it, it really is showing promise, and we cant wait to see how it developed over the next few years.
